1 tablespoons rapeseed oil
1 large red onion, finely chopped
2 medium carrots, finely chopped
2 celery sticks, chopped
450 gram (1 pound) extra lean beef mince
1 teaspoon Minced Garlic
400 gram tin chopped tomatoes
2 tablespoons tomato purée
1 medium courgette, chopped
200 gram (7 ounce) mushroom, sliced
1 teaspoon Oregano
1 teaspoon Dried Basil
2 tablespoons Worcester sauce
250 gram (9 ounce) wholegrain spaghetti
25 gram (1 ounce) Parmesan cheese, grated
Ground Black Pepper , to season
COOKING INSTRUCTIONS
- 1 Heat oil in a large non-stick pan and sauté the onions, carrots and celery for 3-4 minutes.
- 2 Stir in the minced beef and Garlic. Cook until browned, using a fork to break up the mince as it cooks.
- 3 Add the remaining ingredients (except the spaghetti). Bring the sauce to the boil, then lower the heat and simmer gently for 20 minutes. Stirring occasionally.
- 4 Meanwhile, cook the spaghetti according to the packet instructions, drain.
- 5 Season Bolognese with Black Pepper to taste and serve on a bed of hot spaghetti. Sprinkle with grated Parmesan.
