Chicken Jalfrezi

1 tablespoons oil

1 onion, finely chopped (or for best results blend in a food processor)

450 gram (1 pound) boneless, skinless chicken breasts or thigh, sliced

2 tablespoons Medium Curry Powder

¼ teaspoon Black Onion Seed

¼ teaspoon Garlic Pepper

¼ teaspoon Chilli Flakes

½ teaspoon Coriander Leaf

½ teaspoon Mild Chilli Powder

400 gram tin chopped tomatoes

50 millilitre (2 fluid ounce) water

2 tablespoons tomato purée

1 red pepper, diced

Instructions
- 1 Heat the oil in a large frying pan over a medium heat, add the onion and fry for 10 minutes, constantly stirring until it begins to turn golden brown.
- 2 Add the chicken and cook through for 2-3 minutes until it begins to brown.
- 3 Add the herbs and spices and cook for 30 seconds.
- 4 Add the remaining ingredients, cover and cook over a medium heat for 20 minutes, until the chicken is cooked through and the sauce has thickened.
