Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
Heat oil in a frying pan, add leeks and onions and sauté until vegetables are soft. Add mustard to the pan and fry for a further minute.
Transfer to a casserole dish and top with mushrooms. Combine the Schwartz Chicken Casserole Recipe Mix with water in a jug then pour over the vegetables.
Meanwhile, brown chicken thighs for 8 minutes in a frying pan.
Transfer the chicken thighs into your casserole dish along with the vegetables and bake in the oven for another 30 minutes, stir in the single cream to finish.
Serve your delicious chicken with some wild rice
