Chicken, Mushroom & Leek Casserole

  • Pre-heat the oven to 180°C, 350°F, Gas Mark 4.

  • Heat oil in a frying pan, add leeks and onions and sauté until vegetables are soft. Add mustard to the pan and fry for a further minute.

  • Transfer to a casserole dish and top with mushrooms. Combine the Schwartz Chicken Casserole Recipe Mix with water in a jug then pour over the vegetables.

  • Meanwhile, brown chicken thighs for 8 minutes in a frying pan.

  • Transfer the chicken thighs into your casserole dish along with the vegetables and bake in the oven for another 30 minutes, stir in the single cream to finish.

  • Serve your delicious chicken with some wild rice
