In a non-metalic dish mix together the Coriander Leaf, lemon juice and zest, caster sugar and soy sauce. Coat the chicken in the marinade and cover and refrigerate for 15 minutes.
Pre-heat the grill and cook the chicken under a medium heat for 20 minutes, turning occasionally.
Serve the chicken with rice and pan fried courgettes. Garnish with lemon wedges and rind.
