Coriander Chicken Salad

1 bunch spring onions, sliced

1 tablespoons olive oil (or a light spray-on cooking oil)

450 gram (1 pound) chicken breasts, cut into strips

1 tablespoons Ground Coriander

1 teaspoon Garlic Grinder

1 red pepper, sliced

Zest and juice of 1 lemon

2 tablespoons orange juice

1 bag mixed leaf salad

Instructions
- 1 Heat the oil in a frying pan and fry the chicken, Coriander and Garlic Granules for 5-6 minutes until browned.
- 2 Add the pepper and spring onions and fry for 1-2 minutes. Stir in the lemon zest and juice and the orange juice and heat through.
- 3 Toss into the salad and serve immediately.
