Coriander Chicken Salad - tasty, warm chicken strips in a fresh green salad.
  • 1 bunch spring onions, sliced

  • 1 tablespoons olive oil (or a light spray-on cooking oil)

  • 450 gram (1 pound) chicken breasts, cut into strips

  • 1 tablespoons Ground Coriander

  • 1 teaspoon Garlic Grinder

  • 1 red pepper, sliced

  • Zest and juice of 1 lemon

  • 2 tablespoons orange juice

  • 1 bag mixed leaf salad

  • 1 Heat the oil in a frying pan and fry the chicken, Coriander and Garlic Granules for 5-6 minutes until browned.
  • 2 Add the pepper and spring onions and fry for 1-2 minutes. Stir in the lemon zest and juice and the orange juice and heat through.
  • 3 Toss into the salad and serve immediately.
