Curried Chicken & Avocado Sandwich
75 gram (3 ounce) light mayonnaise
2 1/2 teaspoon Medium Curry Powder
pinch Chilli Cooking Paste
1 avocado, peeled and cubed
25 gram (1 ounce) dried cranberries
450 gram (1 pound) boneless, skinless chicken breasts, cooked and diced
2 teaspoon Coriander Leaf
8 slices wholemeal bread
8 lettuce leaves
- 1 Mix the mayonnaise, Curry Powder and Crushed Chillies in a large bowl, until well blended.
- 2 Add the avocado, cranberries, chicken and Coriander Leaf, toss gently to mix.
- 3 Divide the chicken mixture evenly among 4 slices of the bread. Top with the lettuce leaves and remaining slices of bread.
- 4 Serve immediately.
