Mildly spiced diced chicken, combined with avocado and dried cranberries in a light mayonnaise, served in delicious wholemeal bread.
Ingredients
  • 75 gram (3 ounce) light mayonnaise

  • 2 1/2 teaspoon Medium Curry Powder

  • pinch Chilli Cooking Paste

  • 1 avocado, peeled and cubed

  • 25 gram (1 ounce) dried cranberries

  • 450 gram (1 pound) boneless, skinless chicken breasts, cooked and diced

  • 2 teaspoon Coriander Leaf

  • 8 slices wholemeal bread

  • 8 lettuce leaves

Instructions

  • 1 Mix the mayonnaise, Curry Powder and Crushed Chillies in a large bowl, until well blended.
  • 2 Add the avocado, cranberries, chicken and Coriander Leaf, toss gently to mix.
  • 3 Divide the chicken mixture evenly among 4 slices of the bread. Top with the lettuce leaves and remaining slices of bread.
  • 4 Serve immediately.
