Herb Roast Chicken Thighs with Paprika and Ginger

8 chicken thighs, bone in, skin on

2 tablespoons olive oil

¼ teaspoon Ground Ginger

½ teaspoon Paprika

1 lemon, cut into quarters

Sea Salt, and

Ground Black Pepper , to season

Instructions
- 1 Pre-heat the oven to 180oC, 350oF, Gas Mark 4. Place the chicken thighs on a roasting tray and drizzle with olive oil.
- 2 Sprinkle the ginger and paprika over the skin of the chicken then turn over in the spiced oil to coat evenly. Make sure they are placed skin side up when you finish, before seasoning with salt and pepper.
- 3 Squeeze over the lemon juice then place the lemon quarters in the tray.
- 4 Roast in the oven for 40 minutes, or until chicken is cooked through, then serve.
