A delicious quick stir fry chicken supper using Ginger and Garlic, great for all the family to enjoy.
Ingredients
1 teaspoon toasted sesame oil
450 gram (1 pound) skinless, boneless chicken breasts, diced
225 gram (8 ounce) shiitake mushrooms, sliced
½ teaspoon Ground Ginger
1 teaspoon Garlic Cooking Paste
2 heads pak choy, stalks and leaves separated and stalks sliced
1 tablespoons dry sherry
3 tablespoons light soy sauce
½ teaspoon Chilli Flakes
225 gram (8 ounce) rice, cooked

COOKING INSTRUCTIONS
- 1 Heat the oil in a wok or frying pan and fry the chicken for 6-7 minutes or until browned.
- 2 Add the shiitake mushrooms and fry for a further 2 minutes. Add the Ginger and Garlic and fry for 1 minute. Add the stalks of the pak choy to the pan. Stir fry for 2 minutes, adding a splash of water if necessary.
- 3 Add the dry sherry, soy sauce and Crushed Chillies and cook for 3 minutes.
- 4 Now add the leafy part of the pak choy and stir-fry for 1 minute. Serve with rice.
