Spicy Chicken Stir-Fry

A delicious quick stir fry chicken supper using Ginger and Garlic, great for all the family to enjoy.
  • 1 teaspoon toasted sesame oil

  • 450 gram (1 pound) skinless, boneless chicken breasts, diced

  • 225 gram (8 ounce) shiitake mushrooms, sliced

  • ½ teaspoon Ground Ginger

  • 1 teaspoon Garlic Cooking Paste

  • 2 heads pak choy, stalks and leaves separated and stalks sliced

  • 1 tablespoons dry sherry

  • 3 tablespoons light soy sauce

  • ½ teaspoon Chilli Flakes

  • 225 gram (8 ounce) rice, cooked

  • 1 Heat the oil in a wok or frying pan and fry the chicken for 6-7 minutes or until browned.
  • 2 Add the shiitake mushrooms and fry for a further 2 minutes. Add the Ginger and Garlic and fry for 1 minute. Add the stalks of the pak choy to the pan. Stir fry for 2 minutes, adding a splash of water if necessary.
  • 3 Add the dry sherry, soy sauce and Crushed Chillies and cook for 3 minutes.
  • 4 Now add the leafy part of the pak choy and stir-fry for 1 minute. Serve with rice.
