A quick, tasty tray baked dish with warming oregano and thyme to bring out the flavour of the chicken.
Ingredients
900 grams chicken thighs, skinless
1 red pepper, cut into chunks
1 yellow pepper, cut into chunks
1 red onion, cut into chunks
100 grams cherry tomatoes
75 grams chorizo, sliced (optional)
1 tablespoon oil
2 tablespoons water
1 sachet Authentic Spanish Chicken Tray Bake
COOKING INSTRUCTIONS
- 1 STEP 1: Pre-heat the oven to 190°C, 375°F, Gas Mark 5.
- 2 STEP 2: Combine the chicken thighs, peppers, onion, tomatoes, chorizo, oil and water with the Schwartz Chicken Tray-bake Recipe Mix in a large bowl.
- 3 STEP 3: Transfer to an ovenproof tray and cook in the middle of the oven for 45-50 minutes, or until the chicken is cooked through and the juices run clear.
