Marinate the chicken thighs with 1 tbs olive oil, Piri Piri Seasoning, zest and juice of a lime. Cover and set aside for 30 minutes at room temperature or overnight in the refrigerator.
Pre-heat the oven to 180゜C, 350゜F, Gas Mark 4.
Add the vegetables to a large baking tray and place the chicken thighs on top, spreading out evenly.
Cook in the oven for 40-45 minutes, until the chicken is cooked through and the juices run clear.
Serve with a side salad.
