These mouth-watering brownies combine the delicious flavours of chocolate, Vanilla and Cinnamon, with roughly chopped walnuts for addded crunch.

150 gram (5 ounce) plain chocolate
1 Vanilla Pod
100 gram (4 ounce) each, soft margarine and caster sugar
1 free range egg, beaten
½ teaspoon Cinnamon Ground
150 gram (5 ounce) plain flour
½ teaspoon baking powder
50 gram (2 ounce) walnuts, roughly chopped
4 teaspoon milk
COOKING INSTRUCTIONS
- 1 Pre-heat the oven to 180°C, 350°F, Gas Mark 4. Grease a 17.5cm x 27.5cm (7x11 inch) tin and line with greased greaseproof paper. Break the chocolate into pieces and place 100g (4oz) in a bowl over a pan of simmering water. When the chocolate has melted, remove the pan from the heat to cool slightly.
- 2 Split the Vanilla Pod open with a knife and carefully scrape the seeds into a bowl. Add the remaining ingredients to the bowl and beat them together for 1 minute. Beat in the melted and reserved solid chocolate. Spoon the mixture into the tin and bake for 18-20 minutes, until the cake has shrunk from the sides of the tin and springs back when lightly touched.
- 3 Leave the cake to cool and then cut into 12 pieces.
