Creamy Rice Pudding

  • Pre-heat the oven to 200°C, 400°F, Gas Mark 6.

  • Place the rice, sugar, Bay Leaves and milk in a large ovenproof dish. Cut the butter into small pieces and add to the dish. Stir well and sprinkle with freshly grated Nutmeg.

  • Bake for 30 minutes. Reduce the temperature to 325°F, 170°C, Gas Mark 3, and cook for another 1½ hours or until most of the milk has been absorbed.
