Lighter Cinnamon Baked Doughnuts (@jemmaloi)

Light doughnuts flavoured with cinnamon
  • 130 grams plain flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon bicarbonate of soda

  • A pinch of salt

  • 1 teaspoon Cinnamon Ground

  • 1/2 teaspoon Ground Nutmeg

  • 1 egg

  • 70 grams light brown sugar

  • 60 millilitres whole milk

  • 50 grams natural yoghurt

  • 30 grams melted butter

  • 1 teaspoon vanilla extract

  • Cinnamon sugar:

  • 1 teaspoon cinnamon

  • 2 tablespoons caster sugar


  • 1 In a bowl combine the egg, sugar, milk, yoghurt, and whisk together. Then add the vanilla and melted butter and whisk until smooth. Set to one side and in a slightly larger bowl combine your flour, bicarbonate of soda, baking powder, pinch of salt, cinnamon, nutmeg, before pouring in the wet mixture and whisking until you have a smooth batter.
  • 2 Grease a six-hole doughnut tray and pour your mixture into a piping bag. Pipe evenly into the doughnut rings and bake at 180 degrees for 10 minutes. Whilst in the oven combine the caster sugar and cinnamon to make the cinnamon sugar and spread over a small side plate. Turn upside and gently shake to remove the doughnuts from the pan, and whilst still warm, roll them in the cinnamon sugar
