Real Vanilla Custard

  • Place the milk, Vanilla Pod and seeds in a large saucepan and heat gently, bringing slowly to the boil.

  • Meanwhile blend the egg yolks, caster sugar and cornflour together in a large bowl. Strain the hot milk onto the egg mixture stirring continuously.

  • Rinse out the saucepan and pour in the custard mixture. Heat very gently, stirring continuously, until the sauce thickens. This should only take a minute or two. Serve hot or cold removing the Vanilla Pod just before serving.
