  • 300 millilitre (1/2 pint) milk

  • 1/2 Vanilla Pod , , split and seeds reserved

  • 3 medium egg yolks

  • 1 tablespoons caster sugar

  • 1 teaspoon cornflour

  • 1 Place the milk, Vanilla Pod and seeds in a large saucepan and heat gently, bringing slowly to the boil.
  • 2 Meanwhile blend the egg yolks, caster sugar and cornflour together in a large bowl. Strain the hot milk onto the egg mixture stirring continuously.
  • 3 Rinse out the saucepan and pour in the custard mixture. Heat very gently, stirring continuously, until the sauce thickens. This should only take a minute or two. Serve hot or cold removing the Vanilla Pod just before serving.
