Succulent salmon fillets marinated in orange juice, Thyme and Paprika and baked in the oven. Delicious served with this zesty relish of diced orange, red pepper and onion, delicately spiced with a hint of Ginger and Parsley.
For the Salmon, mix the orange juice, Thyme and Paprika in a large bowl. Season with a pinch of Salt and add the salmon fillets, turn to coat well, cover and set aside for 30 minutes.
For the Relish, mix all the ingredients in a medium-sized bowl, cover and refrigerate until ready to serve.
Pre-heat the oven to 200°C, 400°F, Gas Mark 6.
Place the salmon on a foil-lined baking tray, bake for 15-20 minutes or until the fish flakes easily with a fork. Alternatively, grill over a medium-high heat for 6-8 minutes each side, or until cooked through. Serve the salmon with Orange Relish.
