Ingredients
  • 50 gram (2 ounce) butter

  • 1 small onion, finely chopped

  • 4 teaspoon Flat Leaf Parsley

  • 75 gram (3 ounce) fresh breadcrumbs

  • Zest and juice of 1 lemon

  • Salt and pepper to taste

  • 450 gram (1 pound) cod fillet

Instructions

  • 1 Prre-heat the oven to 180°C, 350°F, Gas Mark 4.
  • 2 Melt the butter in a frying pan and fry the onion and Parsley for 3-4 minutes. Stir in the breadcrumbs, lemon zest and juice and fry for 2-3 minutes. Season to taste.
  • 3 Divide the fish into 4 portions and place on a baking sheet. Divide the breadcrumb mixture into 4 and use to top the fish. Bake for 20-25 minutes.
