Creamy Potted Prawns
Melt butter in a saucepan. Stir in prawns, Mixed Herbs, Onion Salt and Cayenne Pepper. Fry gently for approximately 5 minutes. Remove from heat. Allow to cool slightly before stirring in the cream.
Place in refrigerator until completely cold and the butter has set. Spoon onto scallop shells lined with lettuce. Alternatively, the mixture may be divided between ramekin dishes before the chilling stage.
Serve garnished with lemon wedges accompanied by hot toast, biscuits or crackers.
May be stored in refrigerator overnight. Do not freeze.
