Tasty grilled prawns marinated in orange juice and garlic, served with a tangy Asian pesto combining almonds, Coriander Leaf and Ginger. Delicious with crusty bread, serves 4 as a main course or 8 as a starter.
Mix the orange juice, Ginger, oil, Garlic Granules and Salt in a medium bowl. Add the prawns and toss to coat well. Cover and leave to marinade for 20 minutes.
Meanwhile, for the Pesto, finely chop the almonds in a fod processor. Add the remaining ingredients, cover and process again until the mixture is coarsely chopped. Set aside.
Place the prawns on an oiled grill pan. Grill on a medium-heat for 4-6 minutes or until the prawns turn pink, turning occasionally. Serve the prawns with the Asian Pesto.
