  • 1/2 teaspoon Mint Herb

  • pinch Ground White Pepper

  • 225 gram (8 ounce) cooked, peeled prawns

  • 2 eating apples

  • Few drops of lemon juice

  • Paprika , - to garnish

  • 1 teaspoon tomato purée

  • 3 tablespoons natural yoghurt

  • 3 tablespoons mayonnaise

Instructions

  • 1 Combine the yoghurt, mayonnaise, tomato purée, Mint and Pepper in a bowl and stir in the prawns.
  • 2 Just before serving, core and slice the apples. Sprinkle with a little lemon juice to prevent browning.
  • 3 Arrange the apple slices on a serving plate and spoon over the prawns. Sprinkle with Paprika and serve immediately.
