This prawn cocktail with melon and Chilli gives a delicious twist to an old favourite.
Ingredients
  • Juice of 2 limes

  • 2 teaspoon caster sugar

  • 1 teaspoon Garlic Cooking Paste

  • 2 shallots, finely diced

  • 2 teaspoon fish sauce

  • 1 teaspoon Ground Coriander

  • 1 teaspoon Ground Ginger

  • pinch Chilli Flakes

  • 250 gram (9 ounce) cooked King prawns, defrosted if frozen

  • ½ honeydew melon, diced, skin removed

  • ¼ cucumber, shredded

  • 1 carrot, shredded

Instructions

  • 1 STEP 1: Mix the juice of the limes with the sugar, Garlic, shallots, fish sauce, Coriander, Ginger and Crushed Chillies. Add the prawns, toss to coat evenly. Cover and leave to marinate for 30 minutes.
  • 2 STEP 2: Toss the prawns and dressing with the diced melon.
  • 3 STEP 3: To serve, arrange the shredded cucumber and carrots on individual plates or in small dishes. Top with the prawn, melon and dressing.
