Steamed Cod with Creamy Lemon & Parsley Sauce
Delicately cooked cod, gently steamed to retain moisture and flavour and served with a rich and creamy sauce flavoured with Lemon and Parsley. Delicious served with mashed potatoes and broccoli.
- 1 Place the cod fillets in a microwaveable dish and cover with clingfilm. Prick with a fork to let the steam out and cook on HIGH for 6-8 minutes, depending on the thickness of the cod. Leave to stand for 1 minute, then remove the clingfilm carefully. Ensure the fish is piping hot and cooked throughout.
- 2 Meanwhile, pour the sauce into a small saucepan and simmer for 2-3 minutes.
- 3 Serve the steamed cod with a generous helping of the delicious sauce. Great served with mashed potato and broccoli.
