Exotic Fruit Salad

Delicious fresh fruit combined with an orange syrup, gently spiced with Cinnamon, Vanilla and Cardamom. Ideal served with 0% fat Greek yoghurt for a healthy and refreshing start to the day.
  • 150 millilitre (¼ pint) orange juice

  • 2 Cinnamon Sticks

  • 1 Vanilla Pod

  • 6 Cardamom Pods

  • 1 teaspoon sugar

  • ½ teaspoon cornflour

  • 175 gram (6 ounce) melon, cubed

  • ½ small ripe mango, cubed

  • 2 passion fruit, flesh scooped out

  • 2 kiwis, cubed

  • 100 gram (4 ounce) fresh blueberries

  • To serve: 0% fat Greek yoghurt

  • pinch Cinnamon Ground , , to garnish


  • 1 Place the orange juice in a saucepan with the Cinnamon Sticks, Vanilla Pod, Cardamom Pods and sugar. Bring to the boil and simmer gently for 5 minutes.
  • 2 Blend the cornflour with 1 tsp water and add to the pan. Bring to the boil, stirring until thickened. Allow to cool before removing the whole Spices. Transfer to a large bowl and stir in the fruit, cover and refrigerate until chilled.
  • 3 Serve with the yoghurt and a sprinkling of Cinnamon. The remaining fruit salad will keep for 1-2 days in the fridge.
