Turkey Stir Fry

100 gram (4 ounce) butter

425 gram (15 ounce) tin pineapple pieces

400 gram (14 ounce) tin bean shoots, drained

1 each red and green pepper, very thinly sliced

100 gram (4 ounce) mushrooms, thinly sliced

350 gram (12 ounce) cooked turkey, cut into thin strips

For the sauce:
-
25 gram (1 ounce) cornflour
-
2 tablespoons soy sauce
-
2 tablespoons clear honey
-
½ teaspoon Ground Ginger
-
¼ teaspoon Garlic Granules
-
½ teaspoon Ground Black Pepper
-
Sea Salt Adjustable Grinder Mill , to season

Toasted flaked almonds for garnish

100 gram (4 ounce) celery, thinly sliced

Instructions
- 1 Melt the butter over a low heat in a large frying pan or wok. Drain pineapple pieces and reserve juice. Add pineapple pieces, bean shoots, peppers, mushrooms, celery and turkey to the frying pan. Fry very quickly, stirring, for just long enough to heat the turkey.
- 2 Blend cornflour with the pineapple juice, soy sauce, clear honey, Ginger, Garlic Granules and Black Pepper. Pour over the frying pan mixture and bring to the boil, stirring. Add salt to taste.
- 3 Serve the turkey stir fry immediately while the vegetables are still crisp and crunchy, garnished with toasted flaked almonds.
