Turkey Stir Fry

Forget hours watching the bird roast – with this turkey stir fry recipe it takes just 10 minutes to transform fresh ingredients into an aromatic delicacy. Hot ginger, earthy garlic and warming black pepper add a touch of naughty spice to this sweet and sticky turkey stir fry, creating the perfect centrepiece to the alternative Christmas dinner.

  • Melt the butter over a low heat in a large frying pan or wok. Drain pineapple pieces and reserve juice. Add pineapple pieces, bean shoots, peppers, mushrooms, celery and turkey to the frying pan. Fry very quickly, stirring, for just long enough to heat the turkey.

  • Blend cornflour with the pineapple juice, soy sauce, clear honey, Ginger, Garlic Granules and Black Pepper. Pour over the frying pan mixture and bring to the boil, stirring. Add salt to taste.

  • Serve the turkey stir fry immediately while the vegetables are still crisp and crunchy, garnished with toasted flaked almonds.
