Zesty Lemon Pasta Salad

1 red onion, cut into wedges

4 tablespoons extra virgin olive oil

325 gram (11 ounce) dried pasta twists

1 tablespoons olive oil

2 teaspoon Dried Thyme

2 red peppers, cut into wedges

6 spring onions, diagonally sliced

1 lemon, cut into wedges

2 tablespoons lemon juice

½ teaspoon Coarse Ground Black Pepper

Instructions
- 1 Cook the pasta according to the packet instructions. Meanwhile, heat the olive oil in a pan and fry the onion for 5 minutes until lightly browned. Add the lemon and sear for a few minutes, until charred. Transfer to a large bowl. Drain the pasta and add to the bowl.
- 2 Make the salad dressing by mixing the lemon juice, Thyme, Black Pepper and extra olive oil in a bowl. Drizzle over the pasta and toss in the red peppers and spring onions.
- 3 Delicious served with hot, crusty bread.
