A fresh tasting pasta salad seasoned with lemon, Thyme and Black Pepper.
Cook the pasta according to the packet instructions. Meanwhile, heat the olive oil in a pan and fry the onion for 5 minutes until lightly browned. Add the lemon and sear for a few minutes, until charred. Transfer to a large bowl. Drain the pasta and add to the bowl.
Make the salad dressing by mixing the lemon juice, Thyme, Black Pepper and extra olive oil in a bowl. Drizzle over the pasta and toss in the red peppers and spring onions.
Delicious served with hot, crusty bread.
