Ham & Sweetcorn Salad

350 gram (12 ounce) tin sweetcorn, drained

2 small courgettes, thinly sliced

1 lettuce

3 tablespoons olive oil

2 tablespoons wine vinegar

1 tablespoons Flat Leaf Parsley

225 gram (8 ounce) ham, cut into small pieces

450 gram (1 pound) cold cooked new potatoes, sliced

1 teaspoon BBQ Seasoning

Schwartz Sea Salt and Black Pepper to season

Instructions
- 1 Whisk all the ingredients for the dressing together, add the ham and vegetables, stirring until well mixed.
- 2 Arrange the lettuce leaves in a large serving dish or onto individual plates. Spoon the salad onto the lettuce and serve immediately.
