Succulent roast pork flavoured with a delicious Jamaican Jerk seasoning, packed full of allspice, chilli and thyme. Delicious served with roasted sweet potatoes and parsnips.
Ingredients
1.3 kilogram (2lb 12 ounce) joint of rolled leg of pork
1 tablespoons olive oil
4 teaspoon Jerk Seasoning
2 sweet potatoes, peeled and cut into chunks
2 parsnips, peeled and cut into chunks
300 millilitre (½ pint) chicken or pork stock
COOKING INSTRUCTIONS
- 1 Pre-heat the oven to 180°C, 350°F, Gas Mark 4. Brush the pork joint with the oil and rub the Perfect Shake Jamaican Jerk Special Blend over the joint.
- 2 Arrange the vegetables in a roasting tin and top with the joint. Pour over the stock and cover loosely with foil. Roast for 1 hour 30 minutes, removing the foil after 45 minutes.
- 3 Serve the pork and roasted vegetables with the pan juices and seasonal green vegetables.
