A quick and easy idea to enjoy making and eating with the children, this recipe combines focaccia bread with a delicious and herby tomato topping, spicy chorizo sausage and black olives.
Ingredients
1 tablespoons olive oil
1 onion, finely chopped
5 tomatoes, chopped
2 tablespoons Italian Herb Mix
1 loaf focaccia bread
225 gram (8 ounce) spicy chorizo sausage, chopped or ham sliced
50 gram (2 ounce) pitted black olives
50 gram (2 ounce) grated mozzarella
olive oil to drizzle
COOKING INSTRUCTIONS
- 1 Heat the oil in a frying pan and add the onions, tomatoes and Italian Herb Seasoning. Simmer uncovered for 10 minutes.
- 2 Pre-heat the oven to 200°C, 400°F, Gas Mark 6. Slice the bread in half widthways to give 2 large thin pieces. Place the bread on a baking sheet and bake for 2-3 minutes.
- 3 Take the bread out of the oven and spoon the tomato mixture over. Top with the remaining ingredients, drizzle with oil and bake for 12 minutes.
