A quick and easy idea to enjoy making and eating with the children, this recipe combines focaccia bread with a delicious and herby tomato topping, spicy chorizo sausage and black olives.
  • 1 tablespoons olive oil

  • 1 onion, finely chopped

  • 5 tomatoes, chopped

  • 2 tablespoons Italian Herb Mix

  • 1 loaf focaccia bread

  • 225 gram (8 ounce) spicy chorizo sausage, chopped or ham sliced

  • 50 gram (2 ounce) pitted black olives

  • 50 gram (2 ounce) grated mozzarella

  • olive oil to drizzle


  • 1 Heat the oil in a frying pan and add the onions, tomatoes and Italian Herb Seasoning. Simmer uncovered for 10 minutes.
  • 2 Pre-heat the oven to 200°C, 400°F, Gas Mark 6. Slice the bread in half widthways to give 2 large thin pieces. Place the bread on a baking sheet and bake for 2-3 minutes.
  • 3 Take the bread out of the oven and spoon the tomato mixture over. Top with the remaining ingredients, drizzle with oil and bake for 12 minutes.
