Pepper Glazed Gammon

4 gammon steaks

½ teaspoon Black and Red Pepper

1 tablespoons soft dark brown sugar

1 tablespoons oil

2 tablespoons clear honey

2 oranges

15 gram (½ ounce) butter

Instructions
- 1 Snip the gammon rind at 1cm (½") intervals. Mix ¼ tsp Black & Red Pepper with the sugar, oil, honey and 2 tbs orange juice, squeezed from one of the oranges. Brush the mixture over the gammon and cook under a moderate grill for 10-12 minutes, turning occasionally and brushing with the orange juice mixture throughout cooking.
- 2 Meanwhile, melt the butter in a small frying pan, slice the remaining orange and add to the pan together with the remaining ¼ tsp Black & Red Pepper. Fry the orange slices gently for 1 minute, turning frequently.
- 3 Serve the gammon steaks with the orange slices placed on top for decoration.
