Sausage and Apple Casserole

2 tablespoons oil

450 gram (1 pound) sausages

1 onion, sliced

2 carrots, sliced

2 teaspoon Dried Sage

1 tablespoons flour

300 millilitre (1/2 pint) chicken stock

1 tablespoons tomato purée

2 teaspoon malt vinegar

1 eating apple, sliced

Instructions
- 1 Pre-heat the oven to 200°C, 400°F, Gas Mark 6.
- 2 Heat oil in a frying pan and fry the sausages, onion, carrots and Sage until browned. Add the flour and cook for 1 minute.
- 3 Blend in the stock, tomato purée and vinegar. Bring to the boil, stirring. Transfer to an ovenproof casserole dish, cover and bake for 30 minutes. Stir in the apple and cook for a further 5-10 minutes.
