Banana & Mango Chutney

75 millilitre (3 fluid ounce) white wine vinegar

75 gram (3 ounce) soft light brown sugar

25mm fresh ginger

¼ teaspoon Sea Salt

1 teaspoon Garam Masala Powder

1 Cinnamon Sticks, , roughly broken

pinch Garlic Granules

pinch Cayenne Chilli Pepper

3 medium bananas
-
1 medium mango
-
25 gram (1 ounce) raisins

Instructions
- 1 Place the vinegar, sugar, ginger, Salt, Garam Masala, Cinnamon, Garlic Granules and Cayenne Pepper in a small saucepan. Peel two of the bananas, slice and add to the saucepan. Remove the skin from the mango and cut the flesh into small chunks. Add half the chunks to the saucepan and reserve the remainder.
- 2 Heat the banana mixture and simmer, uncovered, for 10 minutes, stirring occasionally until the mixture is thick and pulpy.
- 3 Peel the remaining banana, slice and stir into the chutney, together with the reserved mango chunks and raisins.
- 4 Serve hot or cold. This sweet, fruity chutney goes equally well with Onion Bhajis and with all Indian curries and naan bread.
