Butter Bean, Garlic & Basil Bruschetta
400 gram (14 ounce) baby plum tomatoes, finely chopped
400 gram (14 ounce) tin butter beans, drained and chopped
1 tablespoons Dried Basil
Zest & juice of ½ lemon
3 tablespoons olive oil
10 black olives, pitted and chopped
2 teaspoon Garlic Grinder
8 thick sliced rustic, wholemeal loaf
Sea Salt, and
Ground Black Pepper , to season
- 1 Pre-heat the grill to a medium heat.
- 2 In a large bowl combine the tomatoes, butter beans, Basil, zest and lemon juice, 1 tbs of the olive oil and the olives. Season to taste.
- 3 Add the Garlic to the remaining oil, brush both sides of bread lightly. Place under the grill and lightly toast each side, ensuring not to over-cook and burn the Garlic. Allow the bread to cool slightly.
- 4 Top the bread with the tomato and bean mixture and serve immediately.
