A spicy marinade that gives vegetables a bit of a kick. Serve with couscous and a yoghurt dip
Ingredients
  • FOR THE MARINADE

  • 3 tablespoons olive oil

  • 2 tablespoons Cajun Seasoning

  • Freshly ground black pepper, from Organic Black Pepper Ground Medium , , to taste

  • FOR THE BBQ VEG

  • 1 large red pepper, de-seeded and cut into bite sized pieces

  • 1 large yellow pepper, deseeded and cut into bite sized pieces

  • 2 courgettes, cut into 2cm rounds

  • 2 red onions, peeled and cut into wedges

  • Squeeze of lemon to serve

Instructions

  • 1 Mix the oil, Cajun Seasoning and freshly ground Black Pepper and brush over the prepared vegetables.
  • 2 Thread the vegetables onto the skewers being sure to include a little of everything.
  • 3 Cook the vegetable skewers on a BBQ, griddle pan or under a hot grill, brushing for time to time with any remaining marinade, until the veg has charred and softened a little, they will need around 5-10 mins on each side but be sure to keep a close eye on them.
  • 4 Add a squeeze of fresh lemon before serving
