Cajun BBQ vegetable Kebabs
FOR THE MARINADE
3 tablespoons olive oil
2 tablespoons Cajun Seasoning
Freshly ground black pepper, from Organic Black Pepper Ground Medium , , to taste
FOR THE BBQ VEG
1 large red pepper, de-seeded and cut into bite sized pieces
1 large yellow pepper, deseeded and cut into bite sized pieces
2 courgettes, cut into 2cm rounds
2 red onions, peeled and cut into wedges
Squeeze of lemon to serve
- 1 Mix the oil, Cajun Seasoning and freshly ground Black Pepper and brush over the prepared vegetables.
- 2 Thread the vegetables onto the skewers being sure to include a little of everything.
- 3 Cook the vegetable skewers on a BBQ, griddle pan or under a hot grill, brushing for time to time with any remaining marinade, until the veg has charred and softened a little, they will need around 5-10 mins on each side but be sure to keep a close eye on them.
- 4 Add a squeeze of fresh lemon before serving
