Hot Potato Salad

675 gram (1½ pound) small new potatoes

6 rashers bacon

150 millilitre (¼ pint) soured cream

100 gram (4 ounce) sweetcorn

4 spring onions, sliced

2 teaspoon Pork Seasoning

Instructions
- 1 Cook the potatoes in boiling, salted water for 15-20 minutes or until tender. Drain.
- 2 Meanwhile, grill the bacon until crisp and cut all but one rasher into small pieces.
- 3 Place the potatoes in a serving dish. Pour over the soured cream and add the sweetcorn, spring onions, bacon and Pork Seasoning. Stir gently to ensure that the potatoes are evenly coated and serve immediately with a whole rasher of crisp bacon.
