Schwartz for Veg Mix for Mediterranean Roasted Vegetables gives vegetables a mouth-watering and delicious garlic and chargrill flavour. A great accompaniment to chicken, meat and fish, or simply stir through pasta for a quick and tasty vegetarian meal.

675 gram (1½ pounds) mixed vegetables (courgettes, red, yellow and green peppers, onions and aubergines)
2 tablespoons olive oil
1 sachet Roasted Mediterranean Vegetables
COOKING INSTRUCTIONS
- 1 Pre-heat the oven to 220°C, 425°F, Gas Mark 7, or pre-heat the grill or BBQ to a medium-heat.
- 2 Cut vegetables into 2.5cm (1") chunks, place into a bowl and coat with oil. Sprinkle over sachet contents and toss to coat evenly.
- 3 Spread vegetables onto large baking tray and cook for 30-35 minutes, or until cooked through or place directly on the grill pan or BBQ for 15 minutes, turning occasionally.
- 4 Serve as an accompaniment to chicken, steak, pork or lamb.
