2 red peppers, cut into chunks

2 yellow peppers, cut into chunks

1 large red onion, cut into chunks

2 tablespoons olive oil

Instructions
- 1 Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
- 2 Place the peppers and onions onto a baking tray, drizzle with the olive oil and roast in the oven for 30-35 minutes, until softened and browned.
- 3 Sprinkle generously with the Perfect Shake Sesame Seed, Coriander & Cumin Special Blend and serve immediately
