  • 1 aubergine, cut into chunks

  • 1 large red onion, cut into chunks

  • 2 tablespoons olive oil

  • 2 tablespoons Zaatar

Instructions

  • 1 Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
  • 2 Place the vegetables onto a baking tray, drizzle with the olive oil, sprinkle over the Zaatar and toss. Roast in the oven for 30-35 minutes, until softened and browned.
  • 3 Delicious served with grilled meat.
