  • 3 tablespoons olive oil

  • 350 gram (12 ounce) flat field mushrooms, sliced thickly

  • 40 gram (1 1/2 ounce) butter

  • 75 gram (3 ounce) fresh breadcrumbs

  • 1 teaspoon Minced Garlic

  • 1 tablespoons Flat Leaf Parsley

  • 2 tablespoons Parmesan cheese, grated

  • 2 teaspoon lemon juice

  • 1 Heat the oil in a large pan and fry the mushrooms until softened.
  • 2 Meanwhile melt the butter in another pan and stir in the breadcrumbs, Minced Garlic, Parsley and Parmesan.
  • 3 Arrange the mushrooms in an ovenproof dish and sprinkle with a little lemon juice. Top with the breadcrumb mixture and grill under a moderate grill for about 5 minutes until topping is brown and crispy.
