Tasty potato cakes flavoured with Shallots and fried until golden brown, topped with fried bacon and eggs for a delicious breakfast or brunch.

  • 675 gram (1 1/2 pound) potatoes

  • 2 tablespoons

  • 75 gram (3 ounce) plain flour

  • 675 gram (1 1/2 pound) potatoes

  • 50 gram (2 ounce) Cheddar cheese, grated

  • 2 tablespoons oil

  • 4 medium eggs

  • 8 rashers streaky bacon

Instructions

  • 1 STEP 1: Cook the potatoes in boiling, salted water until tender. Drain.
  • 2 STEP 2: Add the Schwartz Freshlock Shallots, butter and cheese and mash well. Stir in the flour and season to taste. Divide into 4 flat rounds.
  • 3 STEP 3: Heat the oil in a frying pan and fry the potato cakes for 2-3 minutes on each side until golden.
  • 4 STEP 4: Fry the eggs and the bacon.
