Tasty potato cakes flavoured with Shallots and fried until golden brown, topped with fried bacon and eggs for a delicious breakfast or brunch.

675 gram (1 1/2 pound) potatoes
2 tablespoons
75 gram (3 ounce) plain flour
675 gram (1 1/2 pound) potatoes

Knob of butter
50 gram (2 ounce) Cheddar cheese, grated
2 tablespoons oil
4 medium eggs
8 rashers streaky bacon
Sea Salt
COOKING INSTRUCTIONS
- 1 STEP 1: Cook the potatoes in boiling, salted water until tender. Drain.
- 2 STEP 2: Add the Schwartz Freshlock Shallots, butter and cheese and mash well. Stir in the flour and season to taste. Divide into 4 flat rounds.
- 3 STEP 3: Heat the oil in a frying pan and fry the potato cakes for 2-3 minutes on each side until golden.
- 4 STEP 4: Fry the eggs and the bacon.
