Puff Pastry Vegetable Tart

Tasty roasted vegetables, seasoned with Basil and served on a puff pastry base. A delicious starter or lunch served with salad.
  • 1 courgette, sliced

  • 2 red peppers, diced

  • 2 red onions, sliced thinly

  • 2 tablespoons olive oil

  • 12 cherry tomatoes, halved

  • 225 gram (8 ounce) ready made puff pastry

  • 2 teaspoon Dried Basil

  • 100 gram (4 ounce) Feta cheese, cubed


  • 1 Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
  • 2 Coat the vegetables (except the tomatoes), with the oil and place on a baking tray. Roast for 20 minutes. Add the tomatoes and roast for a further 10 minutes.
  • 3 Meanwhile, roll the pastry out and cut into 6 rectangles. Mix the Basil with the roasted vegetables and place on top of the pastry. Place the cheese on the tarts and bake for 20 minutes.
  • 4 Delicious served with a crisp green salad.
