Puff Pastry Vegetable Tart
Tasty roasted vegetables, seasoned with Basil and served on a puff pastry base. A delicious starter or lunch served with salad.
- 1 Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
- 2 Coat the vegetables (except the tomatoes), with the oil and place on a baking tray. Roast for 20 minutes. Add the tomatoes and roast for a further 10 minutes.
- 3 Meanwhile, roll the pastry out and cut into 6 rectangles. Mix the Basil with the roasted vegetables and place on top of the pastry. Place the cheese on the tarts and bake for 20 minutes.
- 4 Delicious served with a crisp green salad.
