  • 2 tablespoons oil

  • 1 onion, sliced

  • 100 gram (4 ounce) courgettes, sliced

  • 2 teaspoon Garam Masala Powder

  • 1/4 teaspoon Turmeric Powder

  • 1 teaspoon tomato purée

  • 200 millilitre (7 fl oz) water

  • 40 gram (1 1/2 oz) creamed coconut

  • 1/4 teaspoon Garlic Granules

  • 350 gram (12 ounce) potatoes, cooked and diced

  • 350 gram (12 ounce) cauliflower florets, cooked

  • Salt and Coarse Ground Black Pepper , - to taste

Instructions

  • 1 Heat the oil and fry the onion and courgettes until softened. Add the Garam Masala, Turmeric, tomato purée, water, creamed coconut and Garlic Granules. Bring to the boil, stirring, until the coconut has melted.
  • 2 Gently stir in the potatoes and cauliflower and heat through gently. Season with salt and Black Pepper.
  • 3 This creamy Indian vegetable dish makes a wonderful accompaniment, or as a main vegetarian meal with rice.
