Spiced Potatoes & Spinach

A vegetarian, medium-heat, curry of spiced potatoes and spinach. Serve as part of an Indian meal or simply on its own with naan bread.

  • Par-boil the potatoes for 5 minutes, until just tender.

  • Meanwhile, heat the oil and fry the onion, over a gentle heat, until softened and browned.

  • Add the Medium Curry Powder and fry for 1 minute. Add the potatoes and spinach, and cook for about 5 minutes until cooked through. Season to taste.
