A vegetarian, medium-heat, curry of spiced potatoes and spinach. Serve as part of an Indian meal or simply on its own with naan bread.
  • 450 gram (1 pound) baby potatoes, halved

  • 2 tablespoons oil

  • 1 onion, chopped

  • 2 tablespoons Medium Curry Powder

  • 225 gram (8 ounce) baby spinach

  • Schwartz Sea Salt and Black Pepper to season

  • 1 Par-boil the potatoes for 5 minutes, until just tender.
  • 2 Meanwhile, heat the oil and fry the onion, over a gentle heat, until softened and browned.
  • 3 Add the Medium Curry Powder and fry for 1 minute. Add the potatoes and spinach, and cook for about 5 minutes until cooked through. Season to taste.
