Tomato Bruschetta

  • 1 ciabatta loaf, sliced

  • 4 tablespoons extra virgin olive oil

  • 1 garlic clove, halved

  • 250 gram (9 ounces) cherry tomatoes, sliced

  • 1 teaspoon balsamic vinegar

  • Generous grind, Italian blend Grinder

  • Schwartz Sea Salt and Black Pepper to taste


  • 1 Pre-heat the grill or a griddle pan.
  • 2 Brush ciabatta slices with half the olive oil, then grill until lightly toasted on each side.
  • 3 Rub one side of ciabatta slices lightly with garlic clove. Combine tomatoes, remaining oil, vinegar and a generous grind of Italian Herb. Season to taste then use to top ciabatta slices.
  • 4 Garish with an extra grind of Italian Herb before serving, and have on hand at the table to grind on extra flavour to taste.
