A tasty chicken dish in a rich sauce of tomatoes and mascarpone, deliciously flavoured with aromatic basil, perfect with pasta to serve all the family.
  • 1 tablespoons olive oil

  • 1 onion, finely chopped

  • 450 gram (1 pound) boneless, skinless chicken breasts

  • 400 gram tin chopped tomatoes

  • 1 teaspoon Minced Garlic

  • 1 tablespoons Dried Basil

  • ½ teaspoon Sea Salt

  • 3 tablespoons mascarpone

  • 1 Heat the oil and fry the onion over a gentle heat until softened but not coloured. Add the chicken and fry on both sides until golden.
  • 2 Add the tomatoes, Garlic, Basil and Salt, bring to the boil, reduce heat and simmer covered for 10 minutes.
  • 3 Stir in the mascarpone and simmer uncovered until the sauce has slightly thickened and the chicken is cooked through. Serve with Pasta.
