A rustic Spanish, tomato and chicken dish with Oregano, Smoked Paprika and Thyme.
Ingredients
  • 1 tablespoons olive oil

  • 450 gram (1 pound) boneless, skinless chicken breasts, cut into strips

  • 250 gram (9 ounce) smoked bacon, sliced

  • 1 yellow pepper, chopped

  • 1 tablespoons Smoked Paprika

  • ½ teaspoon Minced Garlic

  • ½ teaspoon Oregano

  • ¼ teaspoon Dried Thyme

  • ¼ teaspoon Fennel Seeds

  • 2 tablespoons tomato purée

  • 150 millilitre (¼ pint) water

  • 400 gram tin chopped tomatoes

  • Schwartz Sea Salt and Black Pepper to season

Instructions

  • 1 Heat the olive oil and fry the chicken and bacon for 7-8 minutes until browned.
  • 2 Toss in the pepper and add the Smoked Paprika, Minced Garlic, Oregano, Thyme and Fennel Seeds. Cook for a further minute.Serve with rice.
  • 3 Add the tomato purée, water and tomatoes. Simmer for 15 minutes, or until the sauce has thickened. Season to taste.
  • 4 Serve with rice.
