A rustic Spanish, tomato and chicken dish with Oregano, Smoked Paprika and Thyme.
Ingredients
1 tablespoons olive oil
450 gram (1 pound) boneless, skinless chicken breasts, cut into strips
250 gram (9 ounce) smoked bacon, sliced
1 yellow pepper, chopped
1 tablespoons Smoked Paprika
½ teaspoon Minced Garlic
½ teaspoon Oregano
¼ teaspoon Dried Thyme
¼ teaspoon Fennel Seeds
2 tablespoons tomato purée
150 millilitre (¼ pint) water
400 gram tin chopped tomatoes
Schwartz Sea Salt and Black Pepper to season
COOKING INSTRUCTIONS
- 1 Heat the olive oil and fry the chicken and bacon for 7-8 minutes until browned.
- 2 Toss in the pepper and add the Smoked Paprika, Minced Garlic, Oregano, Thyme and Fennel Seeds. Cook for a further minute.Serve with rice.
- 3 Add the tomato purée, water and tomatoes. Simmer for 15 minutes, or until the sauce has thickened. Season to taste.
- 4 Serve with rice.
