Salmon fillets pan-fried with peppers, courgettes and tomatoes and flavoured with a sprinkling of Cajun Special Blend combining chilli powder, allspice, ginger, coriander seed, cumin and thyme. A quick and easy meal for two.
  • 1 tablespoons olive oil

  • 2 skin on salmon fillets

  • 1 courgette, sliced

  • 1 yellow pepper, cut into chunks

  • 1 green pepper, cut into chunks

  • 125 gram (5 ounce) cherry tomatoes, halved

  • 2 teaspoon Cajun Seasoning


  • 1 Heat the oil in a pan, add the salmon fillets, skin side-up, cover and allow to cook for 3 minutes.
  • 2 Remove the lid, flip the salmon over gently and add the courgettes, peppers and tomatoes to the pan. Cover and cook for a further 5-6 minutes, until the salmon is cooked through.
  • 3 Sprinkle over the Cajun seasoning and cook for a further minute.
  • 4 Delicious served with sautéed potatoes.
