Fresh mackerel is a delicious and simple fish when flavoured with special spices and cooked quickly under a hot grill.

  • 400 millilitre (14 fluid ounce) coconut cream

  • 2 1/2 tablespoons

  • 6 tablespoons lime juice

  • 1 1/2 teaspoon Turmeric Powder

  • 4 whole mackerel, gutted and cleaned

  • lime wedges to serve

Instructions

  • 1 Combine the coconut cream, COOK ART Spice Blend, lime juice and Turmeric in a large bowl.
  • 2 Cut 3 diagonal slits in each side of the mackerel down to the bone to allow the marinade to penetrate right into the centre.
  • 3 Add the mackerel to the bowl and coat evenly. Cover and refrigerate for 30 minutes to marinade.
  • 4 Pre-heat the grill to hot and grill the mackerel for 4-5 minutes on each side, basting frequently, until browned and cooked through. Serve immediately with lime wedges.
