Lamb Casserole from Scratch

This recipe will help you create a rich and hearty lamb casserole flavoured with fragrant rosemary, aromatic mint and robust garlic.

  • Pre-heat the oven to 180°C, 350°F, Gas Mark 4.

  • Place the onion and lamb in a flame proof cast iron casserole dish and fry for 5-6 minutes.

  • Add the Garlic, Rosemary, Mint, Bay Leaves then the water, tomatoes, tomato purée, Worcestershire sauce and peppers to the casserole. Season with Salt and Pepper. Bring to the boil.

  • Stir well, cover and cook for 1½-2 hours or until the meat is tender, stirring halfway through.
