This recipe will help you create a rich and hearty lamb casserole flavoured with fragrant rosemary, aromatic mint and robust garlic.
Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
Place the onion and lamb in a flame proof cast iron casserole dish and fry for 5-6 minutes.
Add the Garlic, Rosemary, Mint, Bay Leaves then the water, tomatoes, tomato purée, Worcestershire sauce and peppers to the casserole. Season with Salt and Pepper. Bring to the boil.
Stir well, cover and cook for 1½-2 hours or until the meat is tender, stirring halfway through.
