Tofu with Chilli Sauce

Tofu, which is made from bean curd, is excellent served with spicy minced pork.

  • Blanch the tofu in boiling water for 2 minutes and then drain.

  • Heat the oil and fry the pork, Chillies, tomato purée and Garlic until the pork is well cooked.

  • Add the stock, tofu and soy sauce. Bring to the boil and simmer until almost all of the liquid has evaporated.

  • Blend the corn flour with enough water to form a paste. Stir into the pan and simmer until thickened. Spoon into a dish and drizzle with the oil and top with the spring onions.
