Tofu, which is made from bean curd, is excellent served with spicy minced pork.
Blanch the tofu in boiling water for 2 minutes and then drain.
Heat the oil and fry the pork, Chillies, tomato purée and Garlic until the pork is well cooked.
Add the stock, tofu and soy sauce. Bring to the boil and simmer until almost all of the liquid has evaporated.
Blend the corn flour with enough water to form a paste. Stir into the pan and simmer until thickened. Spoon into a dish and drizzle with the oil and top with the spring onions.
