Pre-heat oven to 200°C, 400°F, Gas Mark 6.
Place the carrots in a large pan with the water and Caraway Seeds. Cover and simmer gently 10 minutes. Drain and return to the pan.
Add the butter, honey and salt, stir to evenly coat then transfer to a baking tray. Cook for 15-20 minutes until carrots begin to caramelize.
Sprinkle over Parsley before serving.
