Plump sausages served with a spicy jalapeno pepper dip.

  • 450 gram (1 pound) good quality sausages

  • 1 onion, sliced into rings

  • 1 tablespoons olive oil

  • 1 tablespoons Hot Chilli Powder

  • 1 tablespoons Flat Leaf Parsley

  • 400 gram (14 ounce) canned, chopped tomatoes

  • 200 gram (7 ounce) cream cheese

Instructions

  • 1 Place the sausages in a large non-stick frying pan and cook over a low heat for 10 minutes, turning occasionally.
  • 2 Add the onions to the pan and continue to cook for a further 10 minutes.
  • 3 Make the dip: Heat the oil and cook the Chilli and Parsley for one minute over a low heat. Add the tomatoes and simmer for 10 minutes, uncovered. Remove the pan from the heat and cool, place the tomato mixture in a blender with the cream cheese and whiz until smooth.
  • 4 Serve the sausages and onions with the dip.
