Sausage Goulash with Smoked Paprika

2 tablespoons olive oil

450 gram (1 pound) potatoes, peeled and cubed

2 onions, sliced

450 gram (1 pound) sausages, cut into chunks

400 gram tin chopped tomatoes

1 tablespoons tomato puree

300 millilitre (1/2 pint) vegetable stock

1 tablespoons Smoked Paprika

1 tablespoons Oregano

1 teaspoon sugar

1 teaspoon Sea Salt

1/2 teaspoon Coarse Ground Black Pepper

Instructions
- 1 Heat 1 tbs oil and fry sausages until browned, drain fat, remove and set aside.
- 2 Heat remaining oil and fry onions in a pan and cook over a high heat for 5 minutes, stirring.
- 3 Return sausages to the pan, add remaining ingredients and bring to the boil, stirring. Cover and simmer for 30-35 minutes, stirring occasionally.
