  • 2 tablespoons olive oil

  • 450 gram (1 pound) potatoes, peeled and cubed

  • 2 onions, sliced

  • 450 gram (1 pound) sausages, cut into chunks

  • 400 gram tin chopped tomatoes

  • 1 tablespoons tomato puree

  • 300 millilitre (1/2 pint) vegetable stock

  • 1 tablespoons Smoked Paprika

  • 1 tablespoons Oregano

  • 1 teaspoon sugar

  • 1 teaspoon Sea Salt

  • 1/2 teaspoon Coarse Ground Black Pepper

Instructions

  • 1 Heat 1 tbs oil and fry sausages until browned, drain fat, remove and set aside.
  • 2 Heat remaining oil and fry onions in a pan and cook over a high heat for 5 minutes, stirring.
  • 3 Return sausages to the pan, add remaining ingredients and bring to the boil, stirring. Cover and simmer for 30-35 minutes, stirring occasionally.
